Our 2012 Pinot Noir is a blend of two vineyard sites. Hyampom was harvested Sept 29th and 30th. The fruit was de-stemmed but not crushed and allowed to ferment with native yeasts. The Hayfork vineyard was picked a full ten days later at both higher sugars as well as acidity. The contrast was dramatic, with the Hyampom lot showing elegant spice and cola notes and fine tannins and the Hayfork lot expressing brooding black fruits and more power in general. The two lots were matured in second fill and older French oak on their fine lees for a full year before being bottled without fining or filtration.
A little shy for the first few minutes in the glass, a deep and savory black cherry note evolves. On the palate the wine shows rich and velvety tannins, deep fruit flavors and a pleasant mix of forest floor and mineral notes. Oak is not a big player in this wine but rather a minor supporting role to the voice of the vine and the two different terroirs singing in harmony.
